Almost four years ago, Paula Pesse Delpiano left behind her career as a chef at fine dining and Michelin-starred restaurants to work at the Chilean food-tech unicorn, NotCo, valued at $1.5 billion last year. Now, she works as the startup’s head chef, testing out the algorithm the company developed to reinvent animal-based food using plant ingredients. Her team infuses the art of cooking into the tech-generated recipes, repeating them as many as 10 times until they are satisfied with the taste.
